Duck and hoisin sauce seems to go together. It is a marriage of tastes which came directly from gustatory heaven.
Below is a recipe that would surely whet your appetite. It is in Peking duck in crostini.
Duck in Hoisin Sauce Crostini
2 stalks spring onions
2 cups of barbecued duck meat, shredded
Half of a long cucumber
4 tbsp hoisin sauce
1 french bread
How to prepare:
Preheat the oven to 160 degrees centigrade.
Cut the french bread into an inch slices.
Put them in a baking sheet in one layer, then drizzle them with olive oil. Turn over after 5 minutes to toast both sides.
While the crostinis are warming in the oven, cut the spring onion into strips. I have been told that leek can be used as a substitute for spring onions. Leek smells and taste of onions.
Cut the cucumber in strips a la matchsticks.
Take the crostinis off the oven. Top them with the duck meat, cucumber, spring onion and drizzle with hoisin sauce.
