My son absolutely loves Sweet & Sour chicken or pork. I always have to order extra portions when we do take out. It is his birthday soon, I might surprise him with a sweet and sour pork. I would practise first.
SWEET AND SOUR PORK
1 lb / 450 g pork loin or belly, sliced into bite-size pieces
1 small tin pineapple chunks
1 large onion, diced
1 red pepper, sliced
2 tbsp soy sauce
3 tbsp of vegetable oil
4 tbps of cornflour
3 tbsp of ketchup or tomato sauce
1 tbsp sugar
1 tsp of salt
3 cloves garlic, minced
Method of preparation:
Boil the pork in 2 cups of water with 1/2 teaspoon of salt until softened, drain. (keeping the pork stock for later).
Stir 2 tbsp of cornflour and the soy sauce. Use this mixture to coat the pork .
Heat the vegetable oil in a wok or frying pan and stir fry the pork until golden all over. Transfer the pork into the serving dish.
Blend the rest of the cornflour with the pork stock.
Using the same wok or frying pan, sauté the garlic and onions, tip in the red and green peppers, pineapple chunks, ketchup, sugar, 1/2 tsp salt.
Pour in the cornflour and pork stock mix.
Stir until sauce thickens.
Adjust the seasoning according to your liking.
Finally pour over fried pork .
Serve with rice or noodles.
