I saw this recipe being cooked in Jessica Soho’s Kapuso Mo (One at heart with Jessica Soho) Apparently the weather in the town of Bauko, in the Mountain Province of the Philippines, has turned decidedly cold. The temperature would often drop to 8 degrees centigrade. Really cold for a tropical country.
Aside from the obvious wearing of warmer clothings like cardigans, bonnets, scarves and gloves, the people have been cooking hot food to warm the body as well as the heart.
The specialty of Bauko is Lumdang. It is boiled pork with dried fragrant lumda beans. By the look of it, I should be cooking lumdang too comes winter.
Lumdang Recipe (Sinabawang Karne)
Ingredients:
Dried Lumda Beans (Red kidney Beans can be used as a substitute)
1 onion, chopped
4 cloves garlic, chopped
2 inches ginger, thinly sliced
1/2 lb smoke meat (gammon)
1lb pork
half a cabbage.
Salt & Pepper to taste.
Method
In a medium size sauce pan, put water to boil.
Add the dried beans and let it soften.
Add smoke gammon or lardon.
Let it simmer for 15 minutes.
In another pan, on a medium heat, add the butter and olive oil.
Stir fry the garlic, don’t let it burn.
Add the onions.
Add the ginger.
Add the fresh pork. Saute until meat is golden brown.
Add these to the sauce pan with the boiling gammon.
Cook for 10 minutes.
At this point season to taste by adding salt and pepper.
Add the cabbage.
Put a lid on the sauce pan and let it boil for 5 minutes or so, until the cabbage is cooked.
Serve immediately with boiled rice.
Yummy!
