This Indian creation is delicious eaten with curries.  I love them.

I got this delicious recipe from the Hairy Bikers.   If you  have a comprehensive store cupboard, this is quick and straightforward to do.

You can also turn this samosa into a meaty version by  adding lamb, pork, chicken, beef or turkey, according to your  preference!

Vegetable Samosas

Ingredients

For the pastry
250g/9oz plain flour
1 tsp salt
2 tsp vegetable oil
1 free-range egg, separated
75-150ml/3-5fl oz warm water

For the filling

2 large potatoes, peeled
2 large carrots, finely chopped
2 tbsp vegetable oil, plus extra for deep-frying
1 small onion, finely chopped
½ tsp turmeric
2 tsp garam masala
1 tsp black mustard seeds
1 tsp salt
½ tsp freshly ground black pepper
4 garlic cloves, finely chopped
1 green chilli, seeds removed, finely chopped
10 curry leaves, finely chopped
75g/3oz frozen peas, defrosted
1 tsp lemon juice
handful fresh coriander leaves
