Pepper Caged Eggs

I saw a photo of fried egg encased in a slice of red pepper last week in Facebook. I thought I’d make it as it looked so pretty and I am rather partial to peppers anyway.

So when my Egg&Bacon Honey requested a fry-up  brunch I thought I should make the caged eggs for him and of course for me too.

Peter said it was very good; coupled with the fried tomatoes as well, our egg and bacon is almost vegetarian! 😉 He is so funny!

Pepper Caged Eggs

I don’t really know what it was called but since the eggs are held within the bounderies of the sliced pepper, I called it pepper caged eggs.

Get a large bell pepper (could be red, green or yellow), sliced it widthwise, refer to photos below.

In a frying pan, heat a bit of oil and add the peppers, ensure that the pan is large enough that the peppers lie down completely flat on the bottom as it would serve as a cage.

Add a bit of butter to each of the peppers, leave for a minute.

Then crack the eggs straight into the peppers.

Fry gently until opaque.

Just add pepper if it is a part of a fry-up of egg and bacon.  Add a bit of salt and pepper if eaten with just toasted bread.
