There are times when you want just a light meal and yet will not leave you starving within the hour or two.
Tapa & Kesong puti salad (Beef tapa with goat cheese) is a very delicious one dish meal for a light lunch or even for supper, when you had a large meal during lunch.
Click here for a beef tapa recipe, otherwise lardon, which is diced smoked bacon, fried until golden all over can be a fantastic substitute. Parma ham can also be lovely with this salad.
The white cheese can be goat cheese, buffalo cheese, brie or any other soft cheeses.
Beef Tapa & Goat Cheese Salad
ingredients:
1/2 head of Romaine lettuce cut roughly
1 medium red onion, sliced into rings and then separated
Beef tapa, lardon or slices of parma ham
Tomatoes, chopped
50g goat cheese, brie or feta cheese, cut into cubes
Method of preparation:
Arrange a bed of lettuce into a serving plate.
Add the tomatoes.
Sprinkle the tapa or lardon onto the dish.
Do the same with the cheese.
Finally add the rings of red onion.
This is a complete meal but it would be lovely eaten with some Italian bread dipped in olive oil.
