This is my comfort food. Succulent pork and juicy button mushrooms cooked in creamy mustard sauce. Eaten with freshly boiled rice with some steamed string beans. It is delicious as a self-reward and even better served at a dinner party with friends.

Pork & Mushroom in Creamy Mustard Sauce
Ingredients:
1 tbsp olive oil
350g pork fillet, thinly sliced
1 large onion, thinly sliced
1 garlic clove, crushed
100g button mushrooms
100ml crème fraîche
1 tbsp wholegrain mustard
handful of basil leaves, chopped finely
Method of preparation:
Heat the olive oil in a large frying pan.
Add the pork and fry for 2 minutes, or until all sides have turned brown, over a high heat.
Add in the onion, garlic and mushrooms and cook for 4-5 minutes, stir frying.
Stir in the crème frâiche and mustard and the basil.
Cook for two more minutes and then remove the pan from the heat.
Serve with rice or chips and seasonal vegetables.

By the way I find that the leftover tastes even better the next day. Just leave it in a covered container in the fridge and heat it up the next day.
