Pastillas De Yema With Mashed Potato

As a child in the Philippines, my sibling and I, like any other child, would bug our mother and father for some coins to buy ourselves sweets. It could be a bubble gum, lollipop, ice-buko, ice-candy or tira-tira. But for me I would buy yema. I love the sweetness and gloopiness of yema that leave you wanting more.

Below is a recipe for this delicious sweet which has been made slightly healthier with the addition of mashed potato 😉 lol.

Just be warned once you’ve had a yema, you’ll end up wanting more.

PASTILLAS DE YEMA RECIPE

* 1 can (14 oz) condensed milk
* 2 egg yolks
* 1 1/2 tablespoons butter
* 1 teaspoon vanilla extract
* 1 tablespoon mashed potato (optional)
*2 tbsps crushed roasted peanuts
* caster(fine) sugar for rolling
* paper or cellophane candy wrappers

1. In a pan, under medium heat, pour and mix thoroughly the condensed milk, egg yolks and mashed potato. Let it boil while stirring continuously.

2.Add butter, vanilla extract and peanuts while still stirring continuously for 25 minutes until the desired stickiness is achieved. Set aside to cool before wrapping.

3. Scoop a teaspoonful of the mixture and with your clean hands roll it into a cylindrical or round shape.To prevent candy mixture from sticking, oil your hands a little.

3. Roll each in caster sugar and wrap in cellophane or paper candy wrapper.

4. Serve as a treat or as a dessert.
