Apple & Pineapple Pudding

Peter and I made apple and pineapple pudding yesterday. We are so proud of ourselves because our joined effort was rather good and really delicious.

I noticed that using our electric food mixer tend to over airiet the sponge mix so I asked Peter to make the sponge mix using elbow grease; mix the flour, sugar, egg and butter manually.

To Make Apple & Pineapple Pudding

Ingredients:

1 can of pineapple slices

3 large bramley apples

4 oz caster sugar

4 oz butter or margarine

4 oz flour

2 large eggs, beaten

Method:

Peeled, core and chop the bramley apples

In a pan, put the chopped apple, add the syrup from the can of pineapple slices into the pan and simmer until tender.

Make the sponge mix

Mix the butter and the sugar.

Add the beaten eggs a little at a time to prevent the mixture to coagulate.

Add the flour to the mixture a little at a time.

Add a little milk or water if the mixture is too steep.

 

In the bottom of the baking pan, spread the pineapple slices and the cooked apples.

Topped with the the sponge mixture.

Spread it evenly.
