Stir-Fried Rice Noodles with Beef
Ingredients:
- 500g flat rice noodles (ho fun noodles)
- 150 gm beef
- 1 onion, chopped
- 120g bean sprouts
- 1 inch ginger, sliced finely
- 1 spring onion, chopped
Marinade:
- 1 tbsp light soy sauce
- 1/4 tsp dark soy sauce
- 1 tsp corn flour
- 1 tbsp brown sugar
- 1 tbsp water
- sesame oil
Preparation:
- In a good size bowl, put the ingedients for the marinade together and give it a good mix.
- Wash then pat dry the beef with a kitchen towel. Thinly slide the meat then drop the slices into the marinade. Ensure that the beef slices are covered by the marinade. Leave to marinate for at least half an hour.
- Using a wok or a fying pan, add oil under a medium heat.
- Add the beef and fry gently on both sides to seal in the juices. Do not stir at this point to prevent the juicy marinade to ooze out. When almost cooked, remove from the wok or pan and set aside.
- Heat more oil using the same wok or pan. Add the onion and stir fry until translucent. Add the ginger and bean sprouts. Stir fry for 3 minutes. Push these to one side of the pan. Add the flat noodles and stir-fry for a minute. Now incorporate the noodles with the bean sprout and ginger and give it a good stir.
- Season to taste by adding a splash of light and dark soy sauce. Add the beef, and combine it to the ingedients by giving it a quick stir . Finally add the spring onion and give it another quick mix. Serve hot with some boiled or fried rice.
