Grape and Walnut Salad

IMG_1289Grapes, walnuts with cottage cheese salad is attractive as well as delicious.

Juicy grapes are bursting with goodness and the walnuts are nuttily crunchy, added to these are the crispness of the freshness of lettuce, all bound by the tangy cottage cheese.  The salad is full of texture, sweetness, saltiness, freshness and creaminess.

It is good as a side and certainly good enough as a starter.

Grape and Walnut Salad

Ingredients (serve 4)

25 g butter

125g halved walnuts

1/2 head of lettuce

225 g cottage cheese

75 g black and green seedless grapes

Dressing:

4 tbsp olive oil

2 tbsp lemon juice

1 tsp ground coriander (this is optional, use it according to your taste)

salt and pepper

Method:

1.  Melt the butter in a saucepan, add the walnuts and cook for at least 3-4 minutes until brown all over.  Remove from the pan and drain using paper towels.

2. Using a pretty salad bowl, place the lettuce, topped by cottage cheese, grapes and walnuts.

3.  Whisk together the olive oil, the coriander if you are using them, and the seasoning of salt and pepper.  With a whisk, gradually add the lemon juice.

4.  Pour the dressing into the salad and serve immediately.
