I have been reading good things about Batanes in the Philippines. Apparently the scenery is so breath-taking, it is to die for! And they have their own special cuisine, one of which is their yellow rice cooked in turmeric. Though turmeric is a by-product of ginger, the rice does not have that gingery after-taste. It is just lovely.
Looking at the method of cooking, I reckon that it can be made anywhere in the world as it does not contain or need any specialised ingredients aside from turmeric, which is widely available in most supermarket.
This yellow rice reminds me of Indian’s rice pilau.

Batanes yellow rice with Turmeric

Ingredients:
- 1 cup white rice, washed
- 1 1/2 tsp turmeric, dissolved in 1/2 cup water
- 1/2 cup fried pork bits or slices
- 1 tsp chopped garlic, toasted
- 1 cup water
Procedure:
- In a medium saucepan, add the rice, water and turmeric mix.
- Stir thoroughly to incorporate the turmeric with the rice
- Bring to a boil.
- Lower down the heat and simmer the rice until all the liquid has evaporated.
- Transfer the rice in a serving dish. Top it with the pork bits and toasted garlic.
- Enjoy!
