Coconut milk is being lauded by nutritionists as something of a superfood. It contains a whole range of nutritional elements such as calcium, magnesium, potassium, protein and even a bit of vitamin B and D. Thereby coconut milk will protect you from all sorts of infection.
Below is a recipe that is delicious and yet takes minutes to prepare. Fresh coconuts are widely available in green grocers; for easier access, major supermarkets stock them in cans. Though, if at all possible, use the milk from a freshly squeezed coconut shreds.
Coconut Milk with Lightly Roasted Pinipig
Ingredients:
300ml coconut milk
150ml fresh whole fat milk
1 tbsp runny honey
1 heaped tablespoon pinipig, lightly roasted
Preparation:
Pour the coconut milk, full fat milk and honey in a blender and whizz for a minute or two.
Serve in tall glasses with a generous spinkling of the deliciously aromatic roasted pinipig.
This is a drink fit for any living deity. 😉
