

Pork Red Pepper Casserole
Ingredients:
4 loin pork chops, boneles
2 tbsp vegetable oil
3 cloves garlic
1 medium onion, chopped finely
2 tomatoes, chopped finely
3 bay leaves
1 can chopped plum tomatoes
1 cup water
1 tbsp tomato puree
3 sweet peppers, cut in half, lengthwise, deseeded
1 cup green beans, topped and tailed
2 carrots, peeled and chopped
salt and pepper
Method of preparation:
Using a large frying pan, heat the oil. Add the pork chops are brown both sides. Remove from the pan and set them aside.
Using the same pan, saute the garlic; ensure not to burn the garlic.
Add the onions and tomatoes. Stir these until they’ve softened.
Add the pork chops.
Pour in the can of chopped plum tomatoes as well as a cup of water. Also add the 3 bay leaves.
Turn up the heat and bring to the boil, cook for 15-20 minutes.
Add the tomato puree and carrots.
Turn down the heat and simmer for 5 minutes.
Now add the sweet peppers and green beans and simmer for another 5 minutes. Do not cover the pan so that the beans will remain brilliant green. 😉
add salt and pepper to taste.
Simmer for another 3 minutes.
Serve with boiled new potatoes, steamed vegetables or rice.
