Roast Pork With Mash Potatoes & Spinach
This was as good as it looks. It is the softest roast pork served with the thinnest sliver of pork crackling that I have ever seen. With it was a dash of mash potato and steamed spinach, drizzled in burgundy gravy.
I may have mentioned already that I love pork (probably because I originally came from the Philippines, where pork is a much loved meat), anyway, every bite of the pork was a taste of heaven to me. It was so delicious it melted in the mouth. The thin crackling was a real cracker, so crispy and so crunchy.
A fine lovely red wine was served with it, which complemented the pork and made it even more of a treat. The hot fruity red wine gave the succulent pork sweetness and lightness.
I wish I knew how this was made. We dined at the Vincent Rooms, where service was fantastic.
Would go there again!
