  1. I love the Simbang Gabi or going to church at the crack of dawn, between 3-5 am. Simbang Gabi starts on the 16 of December to the 24th as an anticipation of the Christmas proper.

    It is a beloved tradition among Filipino Catholics and apparently also by the Aglipayans.

    The weather gets cooler in December in the tropical Philippines and at the early hours in the morning is really cold so after the mass, it is also a part of cultural traditions of worshipper to partake hot drink of salabat or ginger tea.

    Salabat goes down well with bibingka and puto bungbong.

    When puto bungbong and bibingka are widely available then it is truly the Christmas season.
