Arroz Caldo

Another Taste Buds, Unlimited by Beth Celis special.

I love this lugaw, or congee in Chinese. Just the business on a cold rainy day. A great complete meal in bowl.

I can almost smell the ginger and taste the sour calamansi enhancing the gloopy rice concoction. I wish I have someone to cook this for me right now! 😉

ARROZ CALDO

Ingredients:
1 lb chicken meat cut into cubes
1 thumb sized ginger sliced
1 onion finely slice
1 clove garlic
1 cup of white rice
4 cups of water
1 cup chicken stock
5 tbsp .fish sauce
2 stalks of spring onion
bunch of coriander leaves
2 boiled egg sliced
crispy onion fried to garnish
calamansi (optional)
1 tbsp of cooking oil

This is very good for people who want to have a rice with meat and vegetables mixed dish. I like this especially when the weather is cold. And this is very good when you are living in a cold country.

Wash rice properly.

Then saute the onion, garlic and ginger first and add the chicken pieces and the rice.

Add the water and the chicken stock and let it boil for 1 hour on slow to medium heat.

Keep on stirring and after all are cooked and soft, add the fish sauce (patis) to taste.

Transfer them to a serving bowl and garnish with chopped spring onions and coriander leaves .

Add a sliced hard boiled egg and the crispy fried onion and calamansi (optional). Serve hot.
