Baked Marrow with Cheese
This photo was taken by Peter at Mick and Vick’s house. This mediterranian treat was cooked by their neighbours, who are known to cook and bake the most heavenly food.
The recipe for the baked marrow sounds delicious, ideal as a starter. The marrow slices are topped off with at least three types of cheeses or more according to your taste.
The marrows are peeled and then sliced. I would think that this would be popular served as an hors d’oeuvre as well.
Ingredients:
2 firm marrows or 4 courgettes, peeled and sliced
2 tbsp olive oil
2 tsp caraway seeds
9 oz goat cheese, sliced fairly thin
9 oz red Leicester cheese, sliced
9 oz Parmesan cheese, grated or crumbled
1/2 tsp paprika
sea and black pepper according to taste
Method of preparation
Preheat the oven to 180 degrees centigrade.
Spread the marrow or courgette slices on a baking sheet. (You may need a couple of baking sheets to accommodate all the slices)
Sprinkle the marrows with the caraway seeds, a little salt, and a lot of ground black pepper (or according to your taste, of course)
Drizzle with the olive oil. Put the baking sheets near the middle part of the oven. Bake for 5 minutes.
Remove carefully from the oven.
Top each of the marrow with a slice of goat cheese and red Leicester and parmesan cheese.
Sprinkle with paprika and then return to the open and cook for 5-10 minutes until the cheeses have melted or turned gooey.
Remove from the oven and serve with a lovely glass of chilled white wine. Sit in the sunshine and enjoy ever bite of the cheesy marrow!
