Bulgarian Cucumber & Walnut Appetiser

I love this salad or rather this appetiser.  It is so delicious  as toppings to some flat breads such as warm  naan bread or much better, lightly toasted pitta bread.  The tangy flavour from the sour cream makes this cucumber salad all the more refreshing whilst the walnuts give it crunch.

This salad is a good starter, it would certainly encourage and inspire  the taste buds to expect and clamour for a really meaty main dish.

 Bulgarian Cucumber and Walnut Appetiser

1 large cucumber, diced (unpeeled)

5 cloves of garlic, chop finely.

250 ml sour cream (you can also use  instead 120 ml Greek yoghurt mixed with 120 ml double cream)

250 ml thick Greek yoghurt  or Bulgarian yoghurt

3 tbsp chopped fresh dill or 2 tsp dried dill

4 tbsp chopped walnuts

salt

Sprig of dill to decorate

Method:

1. Using a sharp knife, chop the cucumber finely.  Please note that there is no need to peel it.

2. Add the garlic, the sour cream the Greek yoghurt and chopped dill.  Mix it thoroughly to incorporate everything.

3.  Transfer the salad to a very pretty large bowl and sprinkle the walnuts on top.

4.  Finally decorate it with dill to make it even more appetising.
