Cannellini Bean Salad

I shall be reaching my fifth decade in just a few weeks’ time and I thought that I should really start to look after myself, especially my diet. My younger years are now in the past, huhuhu. This was made real to me after doing just a few minutes of Zumba  with my daughter-in-law, Stacey. I was breathless within minutes of dancing salsa. LOL

Anyway I started to look into my enormous library of cookbooks, which have been gathering dusts. I found this recipe which looks yummy as well as easy to make. Apparently it is also an ideal lunchbox din-din.

Cannellini Bean Salad

Ingredients:

1 small red onion
1 red or yellow pepper
400g cannellini beans
4 tbsp vinaigrette, which can easily be bought ready-made in any good supermarket.
1/2 iceberg (I prefer as crunchier than any lettuce I know) or cos lettuce
250g Feta cheese

Method of Preparation:

1. Halve and finely chop the onion and pepper.

2. Drain and rinse the cannellini beans (the beans is canned)

3. Add the vinaigrette and mix well into the beans, pepper and onion.

4. Tear roughly the lettuce and add.

5. Chopped the feta cheese and throw in into the mix.

6. Season with black pepper. And decorate with some parsley.

This is delicious served with a warm bread.
