Halibut with Fava Beans
Awww! This was really good. The presentation was one of perfection. I have never seen fava beans before but of course I have heard of it courtesy of cinema’s super villain, Hannibal Lecter of the Silence of the Lamb.
Anyway the fish was cook into perfection. It was soft and stringy or chewy, just right and there was a lovely paper-thin crunchy fish skin as a garnish. The gravy was a delight. Really went well with the julliene of vegetables.
We really enjoyed it and of course it was serve with an appropriate wine to go with it. Apparently the wine brings out the marriage of the fish with the vegs.
