Almondigas Recipe
This delicious looking soup was cooked and photographed by my childhood friend from Tondo, Manila, Bless Mercado, now based in Canada.
I have to admit though Almondigas looks absolutely scrumptious, I have never tasted it before, I don’t think. But I will now. I have got ready made meatballs in the freezer. It is beef though, I hope it is ok to make almondigas with beef meatballs. 🙂
To make the meatballs (if unlike me, you do not have ready made meatballs) you will need:
1/2 kilo ground pork
1 clove garlic, minced
1 onion sliced
1 egg, lightly beaten
1 tbsp patis (fish sauce)
salt and pepper to to taste
For the broth:
4 cups of chicken stock (or 4 chicken Oxo cubes)
2 oz vermicelli noodle or misua
1 tbsp cooking oil
1 small onion sliced
1 clove garlic minced
1 tbsp patis (fish sauce)
1/2 tsp salt
2 tbsp chopped spring onions.
To cook:
1. Combine all the ingredients for the meatballs. Work your hands with the mixture and then form small balls.
2. Make the broth:
- Saute the onions and garlic in hot oil
- Add the chicken stock
- Season to taste with patis and salt
- Allow to boil
- Add the meatballs to the boiling stock
- Cover and simmer for at least 10 minutes.
- Sprinkle chopped spring onions and pepper on top
- Serve with plain boiled rice.
