I am so proud to say that we, Filipinos, make the best noodle dish in the world. Really!!!! Our noodles, which we call pancit can easily be a one dish meal. It has vegetables, it has boiled eggs, it has shrimp, it has pork, it has chicken and everything else. We have various recipes for noodles and each one is delicious.
My favourite though is Pancit Canton as it has almost everything and more. And the noodle is easy to cook.
The recipe requires the following ingredients:
2 tablespoons vegetable oil
1 onion, diced
3 cloves garlic, peeled and crushed
1 lb pork shoulder, sliced thinly
1 chicken breast, deboned and sliced into thin strips
1/2 lb shrimp, peeled and deveined.
2 tablespoons soy sauce
2 cups chicken broth
1 cup cabbage, shredded
1 cup green beans, julienned
2 carrots, julienned
3/4 cup black wood ear mushroom or 3/4 cup shiitake mushroom, thinly sliced
1 (1 lb) package pancit noodles (Chinese egg noodles)
1/2 teaspoon freshly ground black pepper
patis, to taste (Filipino fish sauce) (optional)
4 spring onions, sliced
1 lemons or 1 kalamansi, cut into wedges
Directions:
Heat oil over medium-high heat in wok or large skillet.
Saute garlic and onions until tender.
Add and brown the pork, chicken and shrimp.
Add soy sauce.
Add chicken broth and bring to boil.
Add cabbage, green beans, carrots and mushrooms.
Cook until vegetables are tender.
Add noodles, mixing gently to prevent them from breaking.
Cook until liquid is absorbed and noodles are done, about 10 minutes.
Remove from heat.
Season with black pepper and patis.
Garnish with spring onions and lemon wedges of halved kalamansi.
Enjoy this finest of Filipino food.
