Pork Tocino Recipe

This recipe is as easy as 1, 2,3 or A B C.

Why?

Well, I used a ready-made powdered marinade from a packet.  I used the tried and tested Mama Sita brand.

I originally googled how to make this at home but I got stressed reading through the recipe.  There is an ingredient called salitre in Filipino which is apparently sodium phosphate.  In addition, a Prague power will also be required. Plus a red food colouring, pineapple juice, etc.

These ingredients will not only cost a bit of money but they might end up chucked at the back of the cupboard never to see the light of day again because as much as I love Tocino, I would not be cooking it every week or even every month.

So I thought why not just get the single-use powder variety?!!!

Here is the super easy recipe that I followed to cook this super delicious pork tocino (see the photo above).

I think I shall cook this recipe again soon and hopefully produce a video to go with it.  Watch this space.

 

Pork Tocino with Mama Sita Tocino Mix

Ingredients

  • 600g pork shoulder
  • 1 packet Tocino Mix
  • 3 cups of water
  • 1 tbsp oil

Method of Preparation

  • Prepare the meat; lay it on a chopping board and slice the meat shoulder chops parellel to the chopping board.  Ensure not to slice all the way through, the end product should look like two pages from a book.  Slicing the meat was just to make it thinner and larger. I think the term used is butterflying cut.
  • Dissolve the tocino power in a cup of water.
  • Put the sliced pork shoulder into a ziplock bag or a lidded glass pyrex bowl.  (I used the second option because my ziplock bags were not big enough 🙂 )
  • Pour over the dissolved tocino powder mix to the pork.
  • Massage the the the marinade to the meat thoroughly.  Ensure that every crevice is covered with the sauce.
  • Leave to marinade in a minimum of an hour or overnight in the fridge.  (Again, I left it on the fridge overnight to be sure that the sauce had gotten to ever fibre of the meat.)
  • To cook:  Put the meat on a large high sided frying pan.  Also pour in the marinade and a couple of cups of water.  (Optional: I added a tablespoon of sauce sauce as well as 2 tsp of garlic powder)
  • Bring to a boil and then lower down the heat and leave to simmer until the meat is soft and the water had evaporated.
  • Add the oil and fry until beautifully sizzling.
