As I have previously blogged (please see Roast Chicken), Sunday is normally a roast dinner day here in the UK.
Yesterday was such a day, we had roast pork. And it was such a lovely pork dinner too, if I say so myself. 😉
To Roast Pork.
After washing the pork, cut the skin in squares or stripes; season it with salt and pepper, and baste it with salt and water; thicken, and boil up the gravy.
Roast Pork Dinner
Ingredients:
1 lb pork
4 cloves of garlic, peeled
1 medium size onion, sliced roughly, not too thinly
1 tsp sage
Salt and pepper
2 tbsp olive oil
For the vegetable accompaniment:
6 medium Potatoes
2 medium carrots
2 handfuls brussels sprouts
1 medium courgette (zucchini)
Put the meat in a good size roasting pan.
Tuck in the garlic into the pork. Put some under it.
Do the same thing with the onion.
Drizzle the meat with olive oil.
Sprinkle with herb – sage is so good with pork.
Add the salt and pepper.
Then rub the pork so all the added ingredients are incorporated into the meat.
Drizzle some more with olive oil.
Put the meat into a preheated oven at 200 degrees centigrade.
Roast for an hour. Baste with its own juices once or twice.
Parboil the potatoes and carrots in salty water.
Cut and trim the rest of the vegetables: green pepper, courgette (zucchini) and brussels sprouts.
Take out the roasting meat from the oven and spoon out the juice from the meat, set aside.
Add the green pepper, courgette and brussels sprouts into the roasting pan.
Ensure that they go on the bottom of the pan.
Put the boiled potatoes and carrots (see photo) over the courgettes, brussel sprouts and green peppers.
Spoon the juice back in, drizzling the potatoes and carrots and other vegs.
After 45 minutes, the vegetables and meat should be perfectly cooked and roasted.
Time to make the gravy. You can make the gravy by adding cornstarch to the juice from the roast with the addition of couple tablespoon of water.
Boil gently while stirring constantly until it has thickened.
But to save time, I make my gravy by using 3 heaps tbsp of gravy granules to half a pint of boiling water. Stir to dissolve the granules. Lastly add the juice from the roast and stir for 30 seconds more.
