Special Suka a la Pokwang (Vinegar Recipe)

I love KrisTv, a Filipino lifestyle program.  I do avidly watch Kris Aquino cooks.  I noticed that she loves adding a vinegar that looks like it has a lot of solids of various colours and textures floating on it.  Apparently this special suka or vinegar was from Pokwang’s very own recipe.

I read through the ingredients and it does sound delicious.

Note:  I am not sure how long you can keep this vinegar as it was not mentioned,  but I reckon it will last a good few weeks if stored in the fridge.

Ingredients

  • 4 cups vinegar
  • 1 cup patis, Filipino fish sauce
  • 1 cup brown sugar (Demerara sugar)
  • a big handful of ginger, thinly sliced
  • 1 head garlic, peeled, gently crushed but leave whole
  • 2 onions, cut & sliced
  • Chilli, sliced thinly
  • 1 tbsp whole black pepper
  • 1/2 cucumber, unpeeled and sliced

Method of Preparation:

1. Pour the vinegar in a bowl.

2. Add the brown sugar and fish sauce.

3. Stir until the granules of the sugar are dissolved.

4. Add the slices of ginger

5. Add the garlic and onions.

6. Drop the chilli into the mixture.,

7. Season with black pepper

8. Now, add the sliced cucumber

9. Give it a good stir to incorporate the solids with the liquid.

10. Transfer into a pickling jar to be kept in the fridge until needed to be used for cooking and drizzling in salad.


Apparently, it is ideal to leave Pokwang’s vinegar for 2-3 days, to give it enough time for the solids to marinate.  Just as I thought, it can be kept for ages in the fridge.
