
I used to love kalamansi (Calamansi) juice when I was still living in the Philippines. There was nothing more thirst quenching than an ice-cold kalamansi juice.
Lime/Kalamansi (Calamansi) Juice
Kalamansi and lime both belong to the citrus family. Lime is more oblong and stays green and sour while Kalamansi is round and visibly smaller and can turn yellow and sweet when it ripens. Just the thought of the sweet and sour taste of kalamansi makes my salivary glands go overdrive.
The recipe for the Lime or Kalamansi Juice
1/2 cup of lime or kalamansi juice
3/4 cup sugar
2 cups water
Combine all of the above in a large pitcher.
Stir to dissolve the sugar.
Chill in the fridge for an hour or so.
On a really hot day, add crush ice to half a dozen glass tumblers.
Top up with carbonated or still water.
