This recipe is just like the more familiar turon that we Filipinos all love as children. This recipe is fairly easy to make and delicious to eat especially when serve still warm/hot.
Banana Peanut Butter Rolls
Ingredients:
3 ripe bananas
1 jar smooth sweetened peanut butter (coarse peanut butter with nutty bits can also be used if preferred)
1 pack lumpia or spring roll wrappers (can be bought at any Oriental food shop)
2 heaped tablespoons of Demerara sugar
Cooking oil for deep-frying
Procedure:
Peel the bananas, cut them in half, lengthwise, then again cut crosswise, yielding 4 pieces from each banana.
Place each piece of bananas in lumpia/spring roll wrapper.
Spread peanut butter on all sides of the bananas and then wrap them securely within the lumpia wrapper.
Meanwhile, in a wok, large sauce pan or even a deep-fat fryer heat the oil.
Just before frying, generously sprinkle Demerara sugar in each of the wrapped bananas and gently lower into the hot oil.
Brown all sides.
Lift these caramelised little packages of bananas onto some paper towels to absorb excess oil.
Serve them with custard, ice-cream or caramel sauce.
