Chicken Mami (Chicken Noodle Soup)
Chicken mami was my favourite tea-time snack when I was still living in Manila, Philippines. A big bowl of chicken noodle soup was greatly appreciated at 3:00 in the afternoon.
Ingredients:
1 cup flaked cooked chicken
1/2kg chicken noodle (mami or canton)
5 cups chicken broth ( or 4 chicken bouillon cubes dissolved in 5 cups of hot water)
2 stalks of spring onions, chopped finely
1/2 iceberg lettuce, chopped
fish sauce, according to taste
fried garlic (optional)
2 hard-boiled eggs, sliced (optional)
Salt and pepper
Method of preparation:
Bring to a boil the chicken broth. Season with salt and pepper and a little fish sauce.
In another pan, cook the noodles in plenty of salted boiling water. Ensure that noodles do not end up soggy (too soft). Drain immediately when cooked.
Divide and assemble the noodles in four bowls.
Add the lettuce, chicken flakes, eggs slices (if using) and spring onions to each of the bowls.
Carefully pour the boiling stock to each of the bowls and top with the fragrant garlic chips.
