Stir-fried Peppers with Mozzarella

This is perfect as a starter or even as a main course.

1 each of yellow, red and green peppers
1 tbsp of extra virgin oil
2 cloves of garlic, peeled and crushed
1 tsp poppy seeds
1 tbsp capers pickled in brine or vinegar, drained
2 tbsp roughly chopped parsley
salt and pepper to taste
Mozzarella cheese, sliced

Halve and core the yellow, red and green peppers, then cut into thin strips.

Heat the olive oil in a wok or large pan over a high heat.

Drop in the peppers and stir-fry for 3-4 minutes, until slightly tender.

Add the garlic and poppy seeds and continue to fry for another minute.

Add the capers and chopped parsley.

Season with salt and pepper.

Continue to stir for a few more second.

Transfer into a serving plate.

Arrange the sliced Mozzarella on top.

Enjoy!

Harissa

Harissa is a Moroccan Chilli relish; it is hot and aromatic made from chillis, spices and herbs and is considered one of the best chilli sauces around. Harissa can be bought already cooked but home-made ones will taste twice better.

Harissa is a fantastic marinade for chicken to be barbecued.   Rub it into the chicken well and it will keep it moist and full of tasty goodness.  I dare say, you might even forget how delicious peri-peri chicken is and be more enamoured with harissa chicken.

Harissa

 Ingredients:

100g medium-hot red chilies, halved and deseeded
4 cloves garlic, peeled
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp caraway seeds
2 tbsp roughly chopped coriander leaves
1/2 tsp salt
4 tbsp extra virgin olive oil, plus extra to seal.

 

Roughly chopped the chillies and garlic, put into a processor.

Dry-fry the coriander, cumin and caraway seeds over a moderate heat until they have turned a shade darker but not burnt. Cool then grind to a powder. (Using a heavy stone mortar and pestle for grinding   can be a satisfying affair) 😉

Add the ground powder to the processor together with the chopped coriander  leaves and salt. Whir until finely chopped.

Keep the blades moving as you add the olive oil.

Scrape this into a very clean jar and can be kept into the fridge for up to 2 months as long as it is always sealed with oil on top.

This is a very cleansing vegetable, a fat-buster too as it stimulates metabolism. It is rich in vitamin B6, folic acid, calcium, iron, magnesium, phosphorus, potassium, zinc, and fibre.

 

This a good recipe to try:

4 Fennel bulbs
2 lemon, juiced
4 tbsp olive oil

Trim the bulbs and cut them into quarters.

Put in a baking tray, drizzle with lemon juice and olive oil.

Season to taste.

Bake in the oven for 45 minutes or so at gas mark 4, 180 degrees.

Serve with chicken or fish.

Pears in Red Wine Syrup

Pears in Red Wine Syrup

This is apparently something special. Very posh. I have not actually cooked or had this recipe before but I’ve heard that it is a celebration of taste. Red wine and pears marry well together creating an explosion of flavours.

Ingredients:

This recipe will serve 8 people

8 large pears, peeled but stalks left on
half a lemon, juiced
800ml red wine
170g caster sugar
2 cinnamon sticks
1 vanilla pod

Method of Preparation:

Put the peeled pears in a deep saucepan.

Drizzle with the juice from half a lemon.

In a bowl mix well the sugar with the red wine. Pour the mixture over the pears.

Add the vanilla pod and cinnamon sticks.

Bring to the boil and cook for 40 minutes or until the pears are soft. Turn the pears to ensure that it is cooked through.

When the pears are ready, take them out from the pan a leave them to cool down in the serving dish.

Cover the saucepan with the red wine sauce and continue boiling until it is reduce to a syrup.

Pour the syrup neatly into the pears.

Serve and enjoy!

Champagne Cocktail

When it is good, it is really good. This basic recipe of a champagne cocktail has stood the test of time. It is as elegant and sophisticated now as when it was sipped by the Hollywood glitterati of the 1940s.

Champagne Cocktail

To make this nectar you will need:

1 white sugar cube
2 dashes of Angostura bitters
25ml brandy
Dry Champagne

Place the sugar cube in a champagne flute.

Moisten with the Angostura Bitters

Add the Brandy.

Stir

Gently add the champagne.

Serve and enjoy!
